A RICH, VELVETY SAUCE WITH TENDER BELL PEPPERS AND JUST THE RIGHT TOUCH OF SPICE - THIS ONE-PAN WONDER IS PURE COMFORT!


Ingredients:

  • 2 bell peppers (any color), diced
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp all-purpose flour
  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup vegetable or chicken broth
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1 tsp balsamic glaze (optional, for serving)


Directions:

  1. Heat olive oil in a skillet over medium heat. Add bell peppers and onion, sautéing until softened.
  2. Stir in garlic, paprika, salt, and black pepper, cooking for another minute.
  3. Sprinkle in flour and mix well to coat the veggies.
  4. Gradually pour in the broth, stirring continuously to avoid lumps.
  5. Add heavy cream and stir until the sauce thickens.
  6. Toss in cherry tomatoes and let them soften slightly.
  7. Garnish with fresh parsley and a drizzle of balsamic glaze before serving.
