Honey-Ricotta Toast with Roasted Figs & Nuts 🍯🍞

Crispy golden toast topped with creamy ricotta, caramelized roasted figs, crunchy nuts, and a drizzle of honey - this is breakfast bliss! Pair it with Zina’s Wheatberry Salad or Vegan Quinoa Salad for a wholesome, balanced start to your day.


Ingredients:

  • 2 slices sourdough or brioche bread
  • 1/2 cup ricotta cheese (or plant-based alternative)
  • 4 dried or fresh figs, halved
  • 1 tbsp olive oil
  • 1 tbsp honey (plus extra for drizzling)
  • 1/4 tsp cinnamon
  • 2 tbsp mixed nuts (walnuts, almonds, cashews), chopped
  • Fresh mint for garnish


Directions:

  1. Roast the Figs – Preheat oven to 375°F (190°C). Toss figs with olive oil, honey, and cinnamon. Roast for 10 minutes until caramelized.
  2. Toast the Bread – While the figs are roasting, toast the bread until golden and crispy.
  3. Assemble – Spread ricotta over the warm toast, top with roasted figs, and sprinkle with chopped nuts.
  4. Drizzle & Serve – Finish with a drizzle of honey and fresh mint. Enjoy immediately!
