Ingredients:
- 1 lb ground beef (or mix of beef & pork)
- 1/2 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 1 egg
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup shredded mozzarella
- Fresh basil for garnish
Directions:
- In a bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper until well combined.
- Roll into small meatballs and set aside.
- Heat olive oil in a pan over medium heat. Cook the meatballs until browned on all sides and fully cooked through.
- Add cherry tomatoes to the pan and sauté for 2-3 minutes until softened.
- Sprinkle shredded mozzarella over the meatballs and let it melt.
- Garnish with fresh basil and extra Parmesan before serving.
