Garlic Parmesan Meatballs 🍝🧄✨

JUICY, GARLICKY, AND COATED IN MELTY PARMESAN—THESE MEATBALLS ARE AN INSTANT FAVORITE! PAIR THEM WITH ZINA’S ORZO CONFETTI SALAD OR PENNE PASTA WITH SPINACH & FETA FOR A MEAL THAT’S BURSTING WITH FLAVOR.

Ingredients:

  • 1 lb ground beef (or mix of beef & pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 1 egg
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded mozzarella
  • Fresh basil for garnish

Directions:

  1. In a bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper until well combined.
  2. Roll into small meatballs and set aside.
  3. Heat olive oil in a pan over medium heat. Cook the meatballs until browned on all sides and fully cooked through.
  4. Add cherry tomatoes to the pan and sauté for 2-3 minutes until softened.
  5. Sprinkle shredded mozzarella over the meatballs and let it melt.
  6. Garnish with fresh basil and extra Parmesan before serving.
