Zucchini Fritters with Smoked Salmon & Creamy Dip 🥒

Ingredients:

  • 2 medium zucchinis, grated
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh herbs (like dill or parsley)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for frying)
  • Smoked salmon, for serving
  • Sour cream or Greek yogurt, for dipping


Directions

  1. Grate the zucchinis and squeeze out as much moisture as possible using a clean kitchen towel.
  2. In a bowl, combine grated zucchini, eggs, flour, Parmesan, herbs, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture into the pan, flattening each into a small fritter. Fry for 2-3 minutes per side, or until golden and crispy.
  4. Serve the fritters warm with smoked salmon and a dollop of sour cream or Greek yogurt. Garnish with fresh herbs.
