Ingredients:
- 2 medium zucchinis, grated
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh herbs (like dill or parsley)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for frying)
- Smoked salmon, for serving
- Sour cream or Greek yogurt, for dipping
Directions
- Grate the zucchinis and squeeze out as much moisture as possible using a clean kitchen towel.
- In a bowl, combine grated zucchini, eggs, flour, Parmesan, herbs, salt, and pepper. Mix until well combined.
- Heat olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture into the pan, flattening each into a small fritter. Fry for 2-3 minutes per side, or until golden and crispy.
- Serve the fritters warm with smoked salmon and a dollop of sour cream or Greek yogurt. Garnish with fresh herbs.
