Ingredients

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup broccoli florets
  • 1 cup cooked rice

  • 2 tbsp vegetable oil

For the sweet and sour sauce

  • 1/4 cup sugar
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • 1/2 cup water
  • 1 tbsp cornstarch, dissolved in 2 tbsp water
  • 1/2 cup pineapple chunks (optional)
  • 1 bell pepper, cubed (optional)


Directions

  1. Season chicken with salt and pepper. In a pan, heat oil over medium-high and cook chicken until golden brown. Set aside.
  2. Steam the broccoli until just tender and cook the rice as per package instructions.
  3. For the sauce, combine sugar, vinegar, soy sauce, and water in a saucepan and bring to a simmer. Add the dissolved cornstarch and stir continuously until the sauce thickens.
  4. Add the cooked chicken (and bell pepper, pineapple if using) to the sauce and toss until well coated.
