Ingredients
- 2 boneless, skinless chicken breasts, cubed
- 1 cup broccoli florets
- 1 cup cooked rice
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Sesame seeds for garnish
For the sweet and sour sauce
- 1/4 cup sugar
- 2 tbsp vinegar
- 2 tbsp soy sauce
- 1/2 cup water
- 1 tbsp cornstarch, dissolved in 2 tbsp water
- 1/2 cup pineapple chunks (optional)
- 1 bell pepper, cubed (optional)
Directions
- Season chicken with salt and pepper. In a pan, heat oil over medium-high and cook chicken until golden brown. Set aside.
- Steam the broccoli until just tender and cook the rice as per package instructions.
- For the sauce, combine sugar, vinegar, soy sauce, and water in a saucepan and bring to a simmer. Add the dissolved cornstarch and stir continuously until the sauce thickens.
- Add the cooked chicken (and bell pepper, pineapple if using) to the sauce and toss until well coated.
- Plate the cooked rice and broccoli, and top with the saucy chicken. Sprinkle with sesame seeds for a nutty finish.
