Why Zina’s Switched from Canola and Soybean Oil to Sunflower Oil for Our Salads

Why Zina’s Switched from Canola and Soybean Oil to Sunflower Oil for Our Salads

AT ZINA’S, QUALITY AND FRESHNESS ARE AT THE CORE OF EVERYTHING WE DO, FROM SOURCING INGREDIENTS TO CRAFTING EACH SALAD BY HAND. A FEW YEARS AGO, WE MADE THE SWITCH FROM CANOLA AND SOYBEAN OILS TO SUNFLOWER OIL IN OUR SALADS AND DRESSINGS, AFTER CAREFULLY EVALUATING THE IMPACT OF EACH OIL ON FLAVOR, TEXTURE, STABILITY, AND OVERALL EXPERIENCE FOR OUR CUSTOMERS.

Here’s why sunflower oil is a better choice for cold dishes and how it enhances our product line.

1. Health Benefits and Nutritional Value

Sunflower oil provides valuable nutritional benefits over canola and soybean oil. It’s rich in vitamin E, an antioxidant that supports cell health, skin wellness, and boosts the body’s natural defenses. This level of vitamin E is significantly higher than that in canola and soybean oils, making sunflower oil a healthier choice. Additionally, high-oleic sunflower oil is rich in monounsaturated fats, which are beneficial for heart health. This type of fat is also more stable, which plays a role in keeping our salads fresh.

2. Improved Freshness, Flavor, and Texture

Sunflower oil brings a light, neutral taste that doesn’t interfere with the natural flavors of salad ingredients. This allows the freshness of greens, herbs, and seasonings to shine, without being masked by any distinct “oiliness.” Its light texture is particularly ideal for salads, as it coats ingredients evenly without making them feel greasy. With sunflower oil, we achieve a fresher, crisper bite, enhancing the eating experience.

3. Stability and Longer Shelf Life

Cold salads, especially those sold pre-made, need to maintain freshness and quality over time. Sunflower oil’s high-oleic content makes it naturally resistant to oxidation, so it’s less likely to turn rancid than oils high in polyunsaturated fats, such as soybean oil. This stability not only protects the oil itself but helps preserve the flavors and freshness of all ingredients, which is ideal for Zina’s handcrafted salads that may be stored for a few days.

4. Allergen-Friendly and Clean Label

Sunflower oil is often perceived as hypoallergenic compared to soybean oil, which some people avoid due to soy allergies. This aligns with our commitment to making Zina’s salads more accessible to a wide range of dietary needs. Sunflower oil is also widely available in non-GMO and organic options, appealing to customers seeking high-quality, clean ingredients free from artificial additives.

5. Versatility Across Salad Styles and Cuisines

Our diverse menu includes a range of salad types, from Mediterranean-style grain salads to hearty legume-based options, and sunflower oil’s subtle profile fits seamlessly across all of them. Its ability to blend well and emulsify makes it ideal for dressings and vinaigrettes that need to stay mixed, an advantage for pre-packaged salads or prepared dressings where separation would affect texture and presentation.

6. Why We Chose Not to Use Olive Oil

Although olive oil has a well-known reputation for health benefits, it isn’t the best option for cold dishes like salads, especially those meant to be refrigerated. Olive oil tends to coagulate and become cloudy when chilled, creating an unappealing, thickened texture that can disrupt the consistency of our salads. Given this, sunflower oil provides the ideal balance of nutrition, flavor, and appearance for refrigerated salads without the risk of an unappetizing texture.

7. Premium Quality from Italy

At Zina’s, we source only the best sunflower oil, importing premium quality directly from Italy. While this Italian sunflower oil comes at a higher price compared to more commonly used oils like soybean or canola, the taste, quality, and consistency it provides are well worth the investment. This choice ensures that every Zina’s salad reflects the highest standards of flavor and authenticity.

In summary, our switch to sunflower oil reflects Zina’s commitment to providing the best in flavor, freshness, and nutritional value. Sunflower oil enhances the quality of our salads while meeting the practical needs of both our production process and our customers’ expectations. We’re excited to offer this improvement and look forward to continuing to deliver salads that meet the highest standards of taste and quality.
