  • 8 oz ramen noodles
  • 1 lb beef sirloin or ribeye, thinly sliced
  • 4 cups beef or chicken broth
  • 2 tbsp soy sauce

  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups baby bok choy, halved
  • 1 cup shiitake mushrooms, sliced
  • 2 soft-boiled eggs, halved
  • Fresh cilantro and green onions, chopped for garnish

 

Directions:

  1. Cook the ramen noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, and sauté until fragrant.
  3. Add the broth, soy sauce, and miso paste. Bring to a boil, then reduce heat and let simmer.
  4. In a separate pan, sear the beef slices over high heat until just cooked through. Set aside.
  5. Add the bok choy and shiitake mushrooms to the broth and cook until tender.
