Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp nutmeg
  • 3/4 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 tsp vanilla extract

 

Directions

  1. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Set aside.
  2. In a large mixing bowl, beat butter and brown sugar until light and fluffy. Mix in the egg, molasses, and vanilla extract until combined.
  3. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Divide into two discs, wrap in plastic, and chill for at least 1 hour.
  4. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Roll out the dough to about 1/4-inch thickness and cut into shapes using cookie cutters.
  5. Transfer to the baking sheets and bake for 8-10 minutes, until edges are lightly browned. Let cool completely on a wire rack.
  6. Decorate with royal icing, sprinkles, or any festive toppings of your choice!
