Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 cups cooked jasmine rice (day-old works best!)
  • 2 eggs, beaten
  • 3 garlic cloves, minced
  • 3 tbsp unsalted butter
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

 

Directions

  1. In a large skillet or wok, melt 1 tbsp of butter over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  2. Add another tbsp of butter to the skillet and pour in the beaten eggs. Scramble until just set, then mix into the rice.
  3. Melt the remaining butter in the pan and sauté the minced garlic until fragrant.
  4. Add the cooked rice, soy sauce, sesame oil, and season with salt and pepper. Stir-fry for 3-4 minutes until well combined.
  5. Add the cooked shrimp back to the pan and toss gently. Garnish with sliced green onions.
