Ingredients:

  • 2 lbs fresh clams, cleaned
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup white wine
  • 2 cups vegetable or seafood broth
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 small handful of spinach or kale (optional)

 

Directions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant.
  2. Stir in the diced tomatoes and smoked paprika, then pour in the white wine and broth. Bring the mixture to a simmer and let it cook for 10-15 minutes to allow the flavors to meld together.
  3. Add the cleaned clams to the pot and cover with a lid. Cook for 5-7 minutes, or until the clams open up (discard any that don’t open).
  4. If using spinach or kale, stir it in at this point and let it wilt into the stew.
  5. Taste and season with salt and pepper as needed.
  6. Ladle the stew into bowls, garnish with fresh parsley, and serve with crusty bread for dipping.
