Pan-Seared Scallops with Chorizo & Herb Oil 🌿🦪

HERE’S THE RECIPE:

Ingredients:

  • 8 large sea scallops
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 slices of Spanish chorizo (thinly sliced)
  • Salt and pepper to taste
  • Microgreens or fresh herbs for garnish

 

For the Herb Oil:

  • 1/4 cup olive oil
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 1 clove garlic, minced
  • Pinch of salt

 

Directions:

  1. Pat the scallops dry with paper towels and season both sides with salt and pepper.
  2. In a large pan, heat the olive oil over medium-high heat. Once the pan is hot, add the scallops, and sear for 2-3 minutes on each side until golden brown and caramelized. Remove the scallops and set aside.
  3. In the same pan, add the sliced chorizo and cook for 1-2 minutes until crispy.
  4. To make the herb oil, combine olive oil, parsley, basil, garlic, and a pinch of salt in a small bowl.
  5. Plate the scallops and chorizo, drizzle with herb oil, and garnish with microgreens or fresh herbs.

 

Chef's Tip: For the perfect sear, make sure your scallops are dry and the pan is hot before adding them in!
